Chicken Ranch Salad

Ingredients
For the chicken:
  • 2 small chicken breast
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • salt and pepper to taste
  • 1 tbsp avocado oil or olive oil
For the salad:
  • 4 big handfuls mixed greens
  • 1 small cucumber chopped
  • 1 bell pepper sliced
  • 2-4 tbsp ranch dressing I used Tesseme's (I also like Primal Kitchen's)- or other dressing of choice

For the salad:

  • 1 bell pepper sliced
  • 2-4 tbsp ranch dressing I used Tesseme's (I also like Primal Kitchen's)- or other dressing of choice
Instructions
  1. Preheat the oven to 450 degrees
  2. Mix the chicken breasts with the avocado or olive oil, salt and pepper, paprika, and garlic powder. Then place on an oiled cookie sheet. Place into oven for 15-20 minutes (or until chicken is cooked through).
  3. Mix the greens, chopped cucumber, and sliced bell pepper.
  4. Once the chicken is done cooking, cut it up and place onto salad. Top with ranch dressing.
  5. Enjoy!
