Turkey Veggie Chili

Ingredients
  • 1/2 lb ground turkey
  • 2 tbsp avocado or olive oil
  • 1/2 small onion chopped
  • 1 bell pepper chopped
  • 1 14oz or smaller can green beans (optional) drained
  • 1 14oz or smaller can black beans drained
  • 1 14oz or smaller can fire roasted tomatoes
  • 1 14oz or smaller can tomato sauce
  • 1/4 tsp cumin
  • 1/4 tsp garlic powder
  • 1/4 tsp chili powder
  • 2 tbsp chicken broth or water
  • crushed red pepper to taste
  • pink salt and pepper to taste

Instructions
  1. Heat a large pot over medium heat. Place 2 tbsp avocado or olive oil in pot. Add in chopped onion, bell pepper, and a little bit of salt and pepper. Sauté for 3-4 minutes.
  2. Add in ground turkey and all of the seasonings. Sauté for about 5 minutes (or until the ground turkey is no longer pink).
  3. Add in the tomatoes, tomato sauce, chicken broth (or water), and some more salt and pepper and crushed red pepper (if you want spice). Bring chili to a boil for a minute or two.
  4. Now bring chili to a simmer (low heat), cover it, and let heat for 25 minutes (or until liquid thickens).
  5. Now add in green beans and black beans and cook heat for another 10 minutes.
  6. Turn stove off and serve! Top with avocado, crushed red pepper, and crackers.
