Chicken Fried Rice

Ingredients
  • 2 servings rice I used organic jasmine white rice
  • 1 bag frozen peas and carrots or buy separately if they don't have a combo bag
  • 2 chicken breasts
  • 4 tbsp coconut aminos (healthier version of soy sauce)
  • 1/2 tsp onion powder
  • 2 cloves garlic minced
  • 1/2 tsp garlic powder
  • 2 eggs
  • salt and pepper to taste
  • crushed red pepper to taste
  • 1/2 small onion
  • 1 tbsp green onion chopped (optional)
  • 2 tbsp olive or avocado oil

Instructions
  1. Follow the instruction given to you to make your rice (rice usually takes the longest-so start with that)
  2. Heat a skillet over medium heat with 1 tbsp olive or avocado oil.
  3. Chop the chicken breasts into small bite size pieces. In a bowl, mix the chicken with 1 tbsp olive or avocado oil, pink salt and pepper, 1/4 tsp garlic powder, and 1/4 tsp onion powder.
  4. Place chicken on skillet and cook until cooked through (timing will depend on how small you cut the pieces). Once the chicken is almost done cooking, add the peas/carrots, chopped onion, chopped green onion, the rest of the seasonings, coconut aminos, and rice to the skillet.
  5. Stir and heat together. While you begin to heat everything up, heat a small pan over medium heat with a dash of oil. Scramble two eggs, chop them up and then add into the fried rice.
  6. Heat everything together and season more if necessary. Enjoy!
