Chicken Tenders, Broccoli, and Potatoes

Ingredients
For the chicken tenders:
  • 2 chicken breasts
  • 1 tbsp olive or avocado oil
  • 1 egg
  • 1/2 cup almond flour or any flour of choice
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp paprika
  • pink salt and pepper to taste
  • cayenne pepper to taste- depending on how spicy you like it
For the potatoes:
  • 2 potatoes thinly sliced
  • 1 tbsp avocado or olive oil
  • 1/4 tsp garlic powder
  • pink salt and pepper to taste
For the broccoli:
  • 2 big handfuls broccoli chopped
  • 1 tbsp olive or avocado oil
  • 1/4 tsp paprika
  • pink salt and pepper to taste

Instructions
  1. Pre-heat oven to 425
For the chicken tenders:
  1. Cut the chicken breasts into tender shaped slices
  2. Coat in olive or avocado oil and a whisked egg
  3. On a separate plate, mix the seasonings and flour together
  4. Coat each chicken tender in the seasoning/flour mix
  5. Place tenders onto an oiled cookie sheet
For the broccoli:
  1. In a bowl, mix the broccoli with the oil and seasonings
  2. Place onto the same cookie sheet as chicken (if there is room, otherwise get another cookie sheet)
For the potatoes:
  1. In a bowl, mix thinly sliced potatoes with the oil and seasonings
  2. Place onto same cookie sheet as broccoli and chicken (if there is room, otherwise get another cookie sheet)
For everything:
  1. Place the cookie sheet(s) with the broccoli, chicken, and potatoes in the oven at 425 for 20-25 minutes (or until chicken tender are cooked through)
  2. Serve with ketchup (I like Primal Kitchen's) and enjoy!
