Crispy Chicken with Walnut, Goat Cheese, and Apple Salad

Ingredients
For the chicken
  • 2 chicken breasts
  • 2 tbsp olive or avocado oil
  • 1 egg
  • 1/4 cup almond flour or flour of choice
  • 1 tsp arrowroot starch
  • pink salt and pepper to taste
  • 1/4 tsp garlic powder
  • 1/4 tsp paprika
For the salad
  • 4 big handfuls greens
  • 1 honey crisp apple chopped
  • goat cheese as much as you'd like
  • 2 small handfuls walnuts
  • dressing of choice I used Salad Girl's apple maple dressing

  • 2 small handfuls walnuts

Instructions
  1. Heat a skillet over medium heat with 2 tbsp oil
  2. For the chicken, mix together the almond flour with the seasonings in a bowl
  3. Whisk together the egg in a SEPARATE bowl
  4. If your chicken breasts are very thick, cut in half.
  5. Dip the raw chicken breasts in the whisked egg and then into the seasoning/flour mix. Coat completely.
  6. Place chicken onto heated skillet and cook on each side until cooked through (timing will depend on how thick your chicken breasts are)
For the salad
  1. Mix the chopped apple, walnuts, goat cheese, and greens together and top/mix with dressing.
  2. Serve everything together and enjoy!
