Crispy Chicken with Walnut, Goat Cheese, and Apple Salad
For the chicken
  • 2 chicken breasts
  • 2tbsp olive or avocado oil
  • 1 egg
  • 1/4cup almond flouror flour of choice
  • 1tsp arrowroot starch
  • pink salt and pepperto taste
  • 1/4tsp garlic powder
  • 1/4tsp paprika
For the salad
  • 4big handfuls greens
  • 1 honey crisp applechopped
  • goat cheeseas much as you’d like
  • 2small handfulswalnuts
  • dressing of choiceI used Salad Girl’s apple maple dressing
  1. Heat a skillet over medium heat with 2 tbsp oil
  2. For the chicken, mix together the almond flour with the seasonings in a bowl
  3. Whisk together the egg in a SEPARATE bowl
  4. If your chicken breasts are very thick, cut in half.
  5. Dip the raw chicken breasts in the whisked egg and then into the seasoning/flour mix. Coat completely.
  6. Place chicken onto heated skillet and cook on each side until cooked through (timing will depend on how thick your chicken breasts are)
For the salad
  1. Mix the chopped apple, walnuts, goat cheese, and greens together and top/mix with dressing.
  2. Serve everything together and enjoy!
