Italian Sausage and Potato Soup

Ingredients
  • 2 tbsp olive oil or avocado oil
  • 1 lb ground Italian sausage
  • 1 14 oz can fire roasted tomatoes
  • 1 12 oz can full fat coconut milk
  • 1/4 tsp dried oregano
  • 1/4 tsp dried basil
  • 2 baking potatoes chopped
  • 1 cup spinach minced
  • 1 small yellow onion minced
  • 4 cloves garlic
  • 1 container (6-8 cups) chicken broth
  • pink salt and pepper to taste
  • crushed red pepper to taste

  • 1 container (6-8 cups) chicken broth
  • pink salt and pepper to taste
  • crushed red pepper to taste
Instructions
  1. Pre-heat oven o 425 degrees
  2. Heat a large pot over medium heat with avocado or olive oil, garlic, onion, pink salt and pepper, oregano, basil, and crushed red pepper. Stir/cook for about 3-5 minutes
  3. Place chopped potatoes on a cookie sheet with olive or avocado oil, pink salt and pepper. Place in oven until cooked through (about 25 minutes)
  4. Add the ground Italian sausage to the pot and sauté until cooked through (about 5-8 minutes)
  5. Once the sausage is cooked, add in the chicken broth, coconut milk, and tomatoes. Bring to a boil and then simmer for 10-15 minutes.
  6. When there are a couple minutes left to simmer, add in the potatoes from the oven and stir gently.
  7. Serve and enjoy! If you are saving some servings for leftovers, I recommend re-heating the soup on the stove with some more chicken broth at the time you want to eat it.
