Teriyaki Chicken, Cauliflower Fried Rice, and Broccoli

Ingredients
  • 2 chicken breasts
  • 4 tbsp teriyaki sauce I used Primal Kitchen's (found at Whole Foods, Amazon, co-ops, etc.)
  • 2 servings cauliflower rice I bought a frozen bag of riced cauliflower that also had peas and carrots in it. You can skip this if you can't find it and just make your choice of rice.
  • 2 tbsp olive or avocado oil
  • pink salt to taste
  • ground black pepper to taste
  • crushed red pepper to taste
  • coconut aminos (healthier version of soy sauce) optional for rice
  • 1 small head broccoli (or part of a big head)

Instructions
  1. In a mixing bowl, mix 4 tbsp teriyaki sauce with 2 raw chicken breasts (even better if you can marinate before you cook)
  2. Heat a skillet over medium heat on the stove with 1 tsp olive oil avocado oil.
  3. Cut up the chicken breasts into bite size pieces and then place onto heated skillet and cook until cooked through (about 7-12 minutes depending on size of the pieces). Stir periodically.
  4. Heat up another skillet over medium heat on the stove with 1.5 tbsp olive or avocado oil. Place cauliflower rice and broccoli (together or separate) onto this skillet and sauté/cook (for about 8 minutes) with pink salt, pepper, crushed red pepper, and garlic powder to taste.
  5. Serve everything together and enjoy!
