Mix chicken with salt and pepper, garlic powder, oregano, and balsamic vinegar.. Top each chicken breast with 2 slices mozzarella and two fresh slices of tomato.
Place in oven for 15-20 minutes (or until chicken is cooked through)
Once the chicken is cooked through, top with fresh basil and balsamic vinegar.
For the potatoes:
Oil a cookie sheet and place two small potatoes (sliced) onto the pan. Mix the potatoes with 1tbsp olive or avocado oil, salt and pepper to taste, 1/2 tsp paprika, 1/2 tsp garlic powder. Cook potatoes for 20 minutes (or until fully cooked).
For the side salad:
Mix 2 large handfuls of greens, 1 tbsp olive oil, 1 tbsp balsamic vinegar.
