Caprese Chicken Breast, Greens, and Potatoes

Ingredients
For the chicken:
  • 2 small chicken breasts
  • 1 tbsp avocado or olive oil
  • salt and pepper to taste
  • 1/4 tsp oregano
  • 1/4 tsp garlic powder
  • 4 slices mozzarella cheese
  • 4 slices tomato
  • 2 small handfuls fresh basil
For the potatoes:
  • 2 small potatoes
  • 1 tbsp avocado or olive oil
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • salt and pepper to taste
For the side:
  • 2 big handfuls mixed greens
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil

  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • salt and pepper to taste
For the side:
  • 2 big handfuls mixed greens
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil
Instructions
For the chicken:
  1. Preheat the oven to 425 degrees
  2. Mix chicken with salt and pepper, garlic powder, oregano, and balsamic vinegar.. Top each chicken breast with 2 slices mozzarella and two fresh slices of tomato.
  3. Place in oven for 15-20 minutes (or until chicken is cooked through)
  4. Once the chicken is cooked through, top with fresh basil and balsamic vinegar.
For the potatoes:
  1. Oil a cookie sheet and place two small potatoes (sliced) onto the pan. Mix the potatoes with 1tbsp olive or avocado oil, salt and pepper to taste, 1/2 tsp paprika, 1/2 tsp garlic powder. Cook potatoes for 20 minutes (or until fully cooked).
For the side salad:
  1. Mix 2 large handfuls of greens, 1 tbsp olive oil, 1 tbsp balsamic vinegar.
