Simple Ground Turkey Tacos

Ingredients
For the taco meat
  • 1/2 lb ground turkey
  • 2 tbsp avocado or olive oil
  • 2 servings taco seasoning I like Simply Organic's Southwest Taco Seasoning
  • 2 big handfuls spinach chopped
  • 1/2 small onion minced
For the toppings:
  • 2 handfuls greens of choice
  • 2 spoonfuls pico I like store bought pico that has onion, tomato, jalapeño, and lime (otherwise you can make your own)
  • fresh cilantro chopped (optional add on)
  • hot sauce to taste
  • 1 can pinto beans
For the taco shell:
  • 4 tortillas I used Siete tortillas
  • tiny bit of avocado or olive oil

Instructions
  1. Heat a skillet or medium heat with olive or avocado oil
  2. Sauté the meat with the taco seasoning until the meat is fully cooked through (no more pink)
  3. On a separate skillet, cook the beans (follow directions on can)
  4. Coat the tortillas in a litte oil and then heat on high heat skillet until warm and crispy.
  5. Top tortillas with taco meat, toppings, and serve with beans on the side (or on your tacos). Enjoy!
