Spaghetti Squash Bolognese

Ingredients
  • 1 small spaghetti squash or 1/2 a big one (or you can make your choice of pasta instead- or both)
  • 1 small can (15 oz or less) tomato sauce I like to use the small cans so I don't waste leftovers from a big one
  • 1/2 lb ground turkey
  • 1/4 tsp oregano
  • 1/4 tsp basil seasoning
  • 1/4 tsp garlic powder
  • pink salt to taste
  • ground black pepper to taste
  • crushed red pepper to taste

Instructions
  1. Pre-heat oven to 400
  2. Cut spaghetti squash in half (may need to warm up in oven a little bit first to get it to cut open), drizzle with 2 tbsp olive or avocado oil, pink salt, pepper, and garlic powder to taste. Or you can make your own choice of pasta instead if you don't like or don't have time for spaghetti squash.
  3. Place in oven at 400 for 40-50 minutes. Take out and cool for 2 minutes and then shred (see picture for reference).
  4. While the spaghetti squash is in the oven, heat up a skillet over medium heat on the stove.
  5. Mix ground turkey with oregano, basil seasoning, garlic powder, pink salt, pepper and crushed red pepper. Sauté on stove until cooked through (until there is no longer any pink). About halfway through cooking the ground turkey-mix in tomato sauce and continue cooking until done.
  6. Mix or top the spaghetti squash with the ground turkey tomato sauce and enjoy!
